Goop's Broccoli and Arugula Soup

What You Need:
 

-Olive Oil

-1 sliced clove of garlic

-Onion

-1 head of broccoli

-2.5 cups of water (I use 1.25 cups water + 1.25 cups of vegetable broth for more flavor)

-Salt and pepper

-3/4 cup of fresh arugula

-Half of a lemon

-(You can also add other veggies like cauliflower or asparagus etc)

Let's Cook!

1. Sautee onion and garlic in olive oil

2.Place in chopped broccoli and cook until bright green

3.Add the water/broth and season with salt and pepper. Boil for 8 minutes or until the broccoli is soft

 

4.Pour mixture into a blender and puree

5.Squeeze in lemon
