Healthy with Nedi's Spinach + Cauliflower Muffins
What you need:
-Olive Oli
-2 cups of cauliflower, grated
-2cups of spinach
-2eggs
-5 tablespoons of mozzarella, shredded
-2 tablespoons of feta
-2 tablespoons of almond flour
(*High Fiber tip: I use tigernut flour, pulverized GGs or a mix of these two because they are higher fiber: SHOP HERE)
-2 tablespoons of greek yogurt
-1/2 teaspoon baking soda
-1/4 teaspoon turmeric
-1 tablespoon oregano
-sprinkle of salt and pepper
-cooking spray
Let's Cook!
1. Saute cauliflower and spinach for 2-3 mins. Drain any extra liquid
2. Preheat oven 375 degrees
3. Mix together eggs, cheeses and flour. ( You can purchase high fiber flour in the WTT Shop)
4. In a different bowl mix yogurt and baking soda. Let this sit until it rises and then add it to the egg, cheese and flour mix
5. Add spinach + cauliflower, spices to the egg mix. Stir until combined thoroughly.
6. Grease muffin pan and add mix
7. Bake for 20 mins at 375 degrees
